Cá hồi là một trong những loại cá biển chứa nhiều dưỡng chất nhất có lợi cho sức khỏe tim mạch, não bộ, quá trình trao đổi chất,… Tuy khoai lang là món ăn dân dã nhưng ít người biết được công dụng đặc biệt của nó. Có vị ngọt đậm nhưng khoai lang lại không gây tăng cân hay tăng đường huyết. Đồng thời protein trong loại thực phẩm này có tác dụng chống ung thư ruột và trực tràng.

1. Nguyên liệu cần chuẩn bị cho món cháo cá hồi khoai lang
200g cá hồi phi lê | ½ miếng phô mai |
Nửa củ khoai lang (100g) | 3 tép tỏi |
100g gạo tẻ, 50g gạo nếp | Hành khô, hành lá |
1 củ hành tây | Các loại gia vị: đường, muối, tiêu, bột nêm |
Lưu ý khi lựa chọn nguyên liệu:
+ Cá hồi phi lê: Bạn nên lựa chọn những cơ sở phân phối cá hồi nhập khẩu uy tín để đảm bảo chất lượng cũng như độ tươi ngon của sản phẩm. Cá hồi tươi là cá hồi phải được mổ trong ngày, miếng phi lê có màu cam hồng đẹp mắt. Khi ấn nhẹ vào thịt cá không bị lõm, có độ đàn hồi và giữ được độ bóng của dầu cá tự nhiên.
Bạn cũng có thể sử dụng cá hồi đông lạnh cho món ăn của mình. Vì thực phẩm đông lạnh vẫn giữ được giá trị dinh dưỡng ban đầu của nó nếu được bảo quản trong nhiệt độ đạt chuẩn. Tránh mua những miếng cá bị nhũn, chảy nước, thịt cá đổi màu và biến chất.
+ Khoai lang: Chọn củ to vừa ăn, vẫn còn tươi, sẽ ngon, ngọt và ít xơ hơn. Không nên chọn củ bị thâm, dập hay bị sùng (hà/ sâu) và tuyệt đối khoai không được có mầm.

2. Các bước thực hiện
Bước 1: Sơ chế nguyên liệu
– Phi lê cá hồi lọc da, bỏ xương và rửa sạch. Có thể khử mùi tanh của cá hồi bằng sữa tươi không đường, hoặc nước cốt chanh và muối, hoặc một chút rượu trắng với gừng đập dập. Sau đó thái nhỏ hình vuông.
Ướp cá hồi vừa thái với 1 muỗng cà phê đường + ½ muỗng cà phê muối + ½ muỗng cà phê tiêu + ½ muỗng cà phê bột nêm. (Không nên cho nhiều gia vị quá sẽ làm mất đi hương vị thơm ngon đặc trưng của thịt cá hồi.)
– Gạo nếp và hạo tẻ đem vo sạch, loại bỏ sạn hoặc tạp chất nếu có rồi để ráo nước.
– Khoai lang bào vỏ, rửa sạch và cắt nhỏ như hạt lựu.
– Hành tím và tỏi bóc vỏ, sau đó băm nhỏ. Hành lá rửa sạch và thái khúc dài 2-3 cm.
– Hành tây rửa sạch và thái nhỏ.
Bước 2: Hầm cháo và xào cá hồi
Gạo tẻ, gạo nếp cho vào nồi với lượng nước vừa phải, tùy thuộc vào sở thích ăn loãng hay đặc của các thành viên trong gia đình. Nếu bạn làm cháo cá hồi khoai lang cho bé ăn dặm thì lượng gạo và lượng nước sẽ cho theo tỉ lệ 1:10.
Đặt nồi lên bếp và đun đến khi sôi, thỉnh thoảng dùng muỗng đảo đều để không bị cháy ở đáy nồi. Đun đến khi cháo mềm nhừ thì tắt bếp.
Nếu bạn muốn dùng được nhiều bữa thì bạn có thể tăng lượng gạo và lượng nước lên. Khi cháo đã hoàn thành thì để nguội và bảo quản trong ngăn mát tủ lạnh cho những lần chế biến sau.
Khoai lang đem hấp trong khoảng 15 phút, sau đó dằm nhuyễn và cho vào nấu chung cùng cháo. Cho một chút muối hoặc bột nêm để cháo hơi đậm vị.
Đặt chảo lên bếp và đổ một chút dầu, đợi dầu nóng thì cho hành tỏi băm vào phi thơm. Sau đó cho cá hồi đã ướp và hành tây thái nhỏ vào xào cùng. Đến khi cá vừa chín tới thì tắt bếp, không nên xào cá hồi quá kĩ sẽ khiến cá bị khô và mất đi chất dinh dưỡng trong thịt cá.
Bước 3: Hoàn thành món cháo cá hồi khoai lang
Cho cá hồi vừa xào vào nồi cháo và đun đến khi sôi. Khoảng 1 phút sau thì cho phô mai vào đảo đều cùng các nguyên liệu và tắt bếp. Múc cháo ra bát và thêm một chút tiêu cùng hành lá vào để hấp dẫn hơn.

3. Yêu cầu thành phẩm
+Cháo mềm, nhuyễn, vừa ăn có vị béo ngậy của thịt cá hồi và vị ngọt đậm đà của khoai lang.
+Có mùi thơm lôi cuốn của hành , tỏi, và mùi tiêu nồng hấp dẫn.
+Cháo cá hồi khoai lang, không quá đặc, không quá loãng, thịt cá chín đều, giữ được màu cam đặc trưng.
